Ingredients

  • 1 large sweet onion Vidalia preferred, about 10-12 oz
  • 3 tablespoons butter divided (2 tbsp softened, 1 tbsp melted)
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon kosher salt
  • Fresh parsley for garnish optional

Equipment

  • 1 baking sheet
  • 1 small bowl
  • 1 sharp paring knife or melon baller
  • 1 piece aluminum foil (12x12 inches)
  • 1 fork (for testing doneness)

Method

  1. Preheat oven to 375°F and prepare a 12x12-inch square of aluminum foil on a baking sheet
  2. Trim both root and stem ends of onion so it sits flat; peel away outer skin
  3. Using a sharp knife or melon baller, cut out center core from top of onion, going one-third down (about 1/2 inch wide), leaving bottom intact
  4. In a small bowl, mix 2 tablespoons softened butter with all seasonings until smooth
  5. Score top of onion in a cross-hatch pattern, cutting about 1 inch deep
  6. Stuff 2 teaspoons seasoned butter into center cavity
  7. Spread 4 teaspoons seasoned butter on top of onion, working it into score marks
  8. Place onion in center of foil square and fold foil up around it, sealing tightly at top
  9. Bake for 55-65 minutes until fork-tender in center
  10. Let cool 2 minutes, carefully open foil, and drizzle with remaining melted butter
  11. Garnish with fresh parsley if desired and serve immediately

Notes

  • Sweet onions like Vidalia work best, but yellow onions are a great substitute
  • Don't core all the way through the bottom or butter will leak out
  • The butter will be bubbling hot when you open the foil let it cool slightly before serving
  • Leftovers can be refrigerated in an airtight container for up to 3 days
  • Serve with crusty bread to soak up the delicious butter sauce
  • For extra caramelization, broil for 2-3 minutes after roasting
  • Can be prepared up to 24 hours ahead through the seasoning step; refrigerate wrapped in plastic, then finish in foil before serving
