Ingredients

  • 1 pound 450g ground beef
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 2 tablespoons taco seasoning
  • 1/4 cup water or beef broth
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 2 cups cooked rice
  • 1 can 15 oz black beans or pinto beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes
  • 1 large avocado
  • 1 cup shredded lettuce or cabbage
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • Sour cream or Greek yogurt
  • Fresh cilantro chopped
  • Lime wedges (topping)
  • Salsa or pico de gallo (topping)
  • Jalapeno slices (topping)
  • Hot sauce (topping)

Equipment

  • 1 large skillet or spatula
  • 1 wooden spoon
  • 1 cutting board
  • 1 sharp knife
  • Measuring cups and spoons
  • 4 serving bowls

Method

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook 3-4 minutes until softened. Stir in minced garlic for 30 seconds.
  2. Add ground beef and cook, breaking it up, until no longer pink (5-7 minutes). Drain excess fat if needed.
  3. Stir in taco seasoning, salt, pepper, and water/broth. Simmer 3-5 minutes until slightly thickened.
  4. Warm the cooked rice. Gently warm beans and corn if desired.
  5. Divide rice among 4 bowls. Top with seasoned beef, beans, corn, lettuce, tomatoes, avocado, and cheese.
  6. Finish with sour cream, cilantro, lime juice, and any other toppings. Serve immediately.

Notes

  • Use 80/20 ground beef for juicier flavor or lean beef for a lighter version.
  • Pre-cooked or microwave rice works great for faster prep.
  • Store beef, rice, and toppings separately in the fridge up to 4 days.
  • Reheat beef and rice before adding fresh toppings.
  • Swap beef with ground turkey or use extra beans for a vegetarian option.
  • Adjust spice level with extra seasoning or hot sauce.
