Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon sea salt or kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons unsalted butter (optional)
  • 1/2 teaspoon paprika, or a pinch of cayenne (optional ; for infused butter)
  • 1 minced garlic clove (optional ; for infused butter)
  • fresh rosemary or thyme for infused butter (a few sprigs or 1 teaspoon dried)

Equipment

  • 1 baking sheet
  • Parchment paper or aluminum foil (1 sheet)
  • 1 large mixing bowl
  • 1 sharp knife for cutting
  • 1 spatula or tongs
  • 1 small saucepan (for infused butter) (optional)

Method

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or foil for easy cleanup.
  2. Scrub the sweet potatoes under running water, pat them dry, and cut into even 1-inch cubes (peel if preferred for a smoother texture).
  3. In a large bowl, toss the cubes with the olive oil, salt, pepper, and any optional seasonings until evenly coated.
  4. If using the optional infused butter, mix it in here for added richness.
  5. Spread the seasoned sweet potatoes in a single layer on the baking sheet, ensuring they're not overcrowded.
  6. Roast in the preheated oven for 25-35 minutes, flipping halfway through with a spatula, until the edges are golden and crispy and the centers are tender when pierced with a fork.
  7. Remove from the oven, let rest for 1-2 minutes, and serve hot, drizzle with any remaining infused butter if you included it.

Notes

  • For crispier results, use a wire rack on the baking sheet to allow air circulation.
  • Store leftovers in an airtight container in the fridge for up to 4-5 days; reheat in a 350°F oven to restore crispiness.
  • This recipe is naturally vegan and gluten-free (skip the butter for vegan).
  • Experiment with variations like adding maple syrup for sweetness or herbs for savoriness to keep it exciting.
  • If your sweet potatoes are larger, adjust cooking time slightly and check for doneness early to avoid drying them out.
