Strawberry Earthquake Cake

A delicious, easy one-pan dessert featuring a strawberry cake base swirled with a rich cream cheese filling studded with fresh strawberries, then topped with white chocolate chips. As it bakes, the layers shift and crack dramatically (the "earthquake" effect), creating gooey cheesecake pockets and melty chocolate in every bite. No frosting needed it's rustic, fruity, creamy, and perfect for potlucks, family gatherings, or a sweet treat.

Ingredients

  • 1 box 15.25 oz strawberry cake mix
  • 3 large eggs room temperature preferred
  • 1 cup water
  • ½ cup vegetable oil or canola oil
  • 8 oz full-fat cream cheese softened to room temperature
  • ½ cup 1 stick unsalted butter, melted and slightly cooled
  • 2 cups powdered sugar confectioners' sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract optional, adds lovely depth
  • 1½ –2 cups fresh strawberries hulled and chopped (divided; use ripe, juicy ones)
  • 1½ –2 cups white chocolate chips or chopped white chocolate bar

Equipment

  • large mixing bowl
  • medium mixing bowl
  • hand mixer
  • 9 inch round baking dish
  • Rubber spatula
  • Butter knife or offset spatula (for swirling)
  • Measuring cups and spoons
  • Wire cooling rack (optional but helpful)

Method

  1. Preheat oven to 350°F (175°C). Generously grease a 9×13-inch baking dish with butter or nonstick spray (line with parchment paper overhang for easy removal if desired).
  2. In a large bowl, combine strawberry cake mix, eggs, water, and oil. Mix on low speed or by hand until just combined (a few small lumps are okay don't overmix).
  3. Pour batter into the prepared dish and spread evenly with a spatula.
  4. In a medium bowl, beat softened cream cheese and melted butter with a hand mixer until smooth and creamy (1–2 minutes, scrape sides as needed).
  5. Add powdered sugar, vanilla extract, and almond extract; beat until fluffy and fully incorporated (another 1–2 minutes).
  6. Gently fold in ¾–1 cup chopped strawberries with a spatula to distribute evenly.
  7. Dollop large spoonfuls of the cream cheese mixture over the cake batter.
  8. Use a butter knife to gently swirl the dollops into the batter with figure-eight or zigzag motions aim for visible marbling and ribbons (don't fully mix).
  9. Scatter remaining chopped strawberries and white chocolate chips evenly over the top; press lightly if needed.
  10. Bake 45–55 minutes until edges are set, top is golden with visible cracks, and center has a slight jiggle (gooey pockets are normal; toothpick in cake portion should come out mostly clean).
  11. Cool in pan on a wire rack for 20–30 minutes (or longer for cleaner slices). Serve warm for gooey texture or chilled for firmer slices.

Notes

  • Use room-temperature cream cheese for the smoothest filling  cold cream cheese can leave lumps.
  • The center stays slightly jiggly even when done  that's the signature gooey cheesecake texture!
  • Fresh strawberries add the best flavor and moisture; if using frozen, thaw fully, drain, and pat very dry.
  • Store covered in the fridge up to 5 days (tastes even better on day 2–3). Freeze individual slices wrapped tightly up to 3 months; thaw in fridge or warm briefly in microwave.
  • This cake is very forgiving  adjust strawberry or chocolate amounts to taste.
  • For extra indulgence, serve with vanilla ice cream or whipped cream.
