Ingredients

  • 1 cup Plain Greek Yogurt 2% works well for creaminess without excess calories
  • 1 cup Milk dairy, almond, oat, or coconut; unsweetened is best
  • ¼ cup Chia Seeds
  • 1-2 tbsp Maple Syrup or Honey start with 1 tablespoon
  • 1 tsp Vanilla Extract

Optional Toppings

  • Fresh berries strawberries, blueberries, raspberries
  • Sliced banana or apple
  • Drizzle of nut butter
  • Chopped nuts almonds, walnuts
  • Sprinkle of cinnamon or cocoa powder

Equipment

  • medium mixing bowl
  • whisk or fork
  • 2-3 Airtight Containers or Mason Jars (for storage)

Method

  1. Mix the Base: In a medium bowl or large jar, combine the Greek yogurt, milk, maple syrup, and vanilla extract.
  2. Whisk until the mixture is completely smooth and the sweetener is dissolved.
  3. Add the Chia Seeds: Sprinkle the chia seeds evenly over the liquid mixture.
  4. Whisk thoroughly for at least a minute to ensure every seed is coated and to prevent any clumps from forming.
  5. Initial Rest: Let the mixture sit at room temperature for 5-10 minutes.
  6. After resting, give it another good stir to redistribute any seeds that may have settled at the bottom.
  7. If you are preparing individual servings, divide the mixture into your containers now.
  8. Chill and Set: Cover the bowl or containers and place them in the refrigerator to chill for at least 4 hours, though overnight (8+ hours) is highly recommended for the best, thick texture.
  9. Serve: Before serving, give the pudding a final stir. If it's too thick, add a splash of milk to reach your desired consistency.
  10. If it's still too runny, stir in an extra teaspoon of chia seeds and let it rest in the fridge for another 30-60 minutes.
  11. Top with your favorite toppings and enjoy!

Notes

  • Storage: Store in an airtight container in the refrigerator for 5-7 days. The flavor often improves after a day. Stir before eating if any separation occurs. Freezing is not recommended as it can make the texture grainy.
  • Creaminess Tip: For the creamiest result, whisk the mixture thoroughly at the start and again after 10 minutes. Using full-fat yogurt or richer milks like oat or coconut milk will also enhance the creaminess.
  • Chia Seed Freshness: Ensure your chia seeds are fresh for the best gelling. If you're unsure, you can test a small spoonful in water; it should form a gel within 15-20 minutes.
