2. No-Bake Oreo Cheesecake
Zero oven, maximum cookies-and-cream joy. My daughter requests this every single year.
Ingredients
- 30 Oreos, crushed (divided)
- ½ cup melted butter
- 24 oz cream cheese, softened
- ½ cup sugar
- 1 tsp vanilla
- 8 oz Cool Whip (or whipped cream)
Instructions
- Mix 22 crushed Oreos with butter, press into pan for crust.
- Beat cream cheese, sugar, and vanilla until fluffy, fold in Cool Whip and remaining crushed Oreos.
- Spread into crust, chill 4–6 hours (or overnight).
- Top with extra Oreos before serving.
Tip
Freeze 20 minutes before slicing for perfect clean cuts trust me, it’s magic.
3. Mini Egg Cheesecakes
These cute little treats started as an Easter experiment… now my kids demand them every month.
Ingredients
- Oreos cookies crushed
- 16 oz cream cheese, softened
- ½ cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup chopped Mini Eggs + extra for topping
Instructions
- Place crushed Oreo cookies in each lined muffin cup.
- Beat cream cheese and sugar, add eggs and vanilla, fold in chopped Mini Eggs.
- Fill cups ¾ full, bake 20–22 min at 325°F.
- Cool, then top with more crushed Mini Eggs.
Tip
Slightly under-bake them they firm up perfectly in the fridge.
4. Pumpkin Cheesecake
As soon as November hits, these disappear from the pan suspiciously fast.
Ingredients
Crust
- 2 cups gingersnap crumbs
- ½ cup melted butter
Filling
- 24 oz cream cheese, softened
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 cup pumpkin puree
- 3 eggs
- ¼ cup heavy cream
- 2 tsp pumpkin pie spice
- 1 tsp vanilla 2 tbsp flour
Instructions
- Preheat oven to 350°F.
- Mix crust, press into 9-inch springform pan, bake 10 min.
- Lower oven to 325°F. Beat cream cheese + sugars until smooth.
- Add pumpkin, cream, spice, vanilla, flour, eggs ; mix.
- Pour into crust.
- Place pan in water bath, bake 60–70 min (edges set, center slightly jiggly).
- Turn off oven, crack door, cool 1 hour inside.
- Chill 6+ hours.
Tip
Run a knife around the edge right after baking no cracks, ever!
5. New York Cheesecake
Tall, dense, creamy perfection. This is the recipe that turned me into “the cheesecake friend.”
Ingredients
Crust
- 2 cups graham cracker crumbs
- ½ cup butter
- ¼ cup sugar
Filling
- 5 (8 oz) blocks cream cheese, room temp
- 1¾ cups sugar
- 3 tbsp flour
- 5 eggs + 2 yolks
- ¼ cup heavy cream
- 2 tsp vanilla
- Zest of 1 lemon (optional but amazing)
Instructions
- Mix and press crust, bake 12 min at 400°F, then lower to 200°F.
- Beat cream cheese, sugar, and flour until silky, add eggs slowly, then cream and flavorings.
- Wrap pan in foil, place in water bath, bake 3 hours at 200°F, then leave in turned-off oven 1 hour.
- Garnish with cream or strawberry
- Chill overnight.

Patience is everything slow baking + overnight chill = zero cracks and pure creaminess.
