- 4 lbs Yukon Gold potatoes (or russets), peeled and cut into ½-inch cubes
- 1 large yellow onion, finely diced (about 1½ cups)
- 5 cloves garlic, minced
- 8 cups chicken broth (vegetable broth works too)
- 1 tsp salt (plus more to taste later)
- ¾ tsp ground black pepper
- 1½ tsp dried Italian seasoning (If you have any)
- ½ tsp smoked paprika (optional but highly recommended)
- 8 oz full-fat cream cheese, softened and cubed
- 1½ cups heavy cream (or half-and-half)
- 1½–2 cups shredded cheddar cheese
Toppings bar: crispy bacon, extra cheddar, green onions, sour cream, chives, hot sauce—are my favorites!
Instructions
- Peel the potatoes (or leave skins on Yukon Golds if you like a little rustic texture). Cut into even ½-inch pieces—uniform size is the key to even cooking.
- Dice the onion finely and mince the garlic (I use a garlic press because I’m lazy).
- Add the potatoes, onion, garlic, chicken broth, salt, pepper, Italian seasoning, and smoked paprika straight into your 6–8 quart slow cooker.
- Give everything a good stir so the seasonings aren’t just sitting on top.
- Put the lid on and set it to:

If you want it extra thick, whisk 2 Tbsp cornstarch with 2 Tbsp cold water, stir it in, and let it cook on HIGH for 10 more minutes. Totally optional—this soup is already pretty perfect.
