Flank steak is the unsung hero of weeknight dinners and weekend cookouts. It’s affordable, cooks in minutes, and drinks up flavor like nobody’s business.
Whether you’re feeding picky kids, trying to impress friends, or just treating yourself after a long day, these five recipes have saved my sanity more times than I can count.
I’ve tested dozens of marinades and methods over the years, and these are the ones my family begs for on repeat.
From the soy-marinated version my son requests every birthday to the garlic-butter one that makes my husband do a little happy dance at the table, each recipe brings something different to the plate.
Ready to become a flank steak legend? Here we go!
1. Juicy Flank Steak with Soy Marinade
The one that started it all. Sweet, salty, and so tender my kids fight over the last slice.
Ingredients
- 1½–2 lb flank steak
- ½ cup soy sauce
- ¼ cup olive oil
- ¼ cup brown sugar
- 3 Tbsp Worcestershire sauce
- 4 garlic cloves, minced
- 2 Tbsp balsamic vinegar
- 1 tsp black pepper
Instructions
Marinate the Steak
Whisk all marinade ingredients in a zip-top bag. Add steak, seal, and massage to coat. Refrigerate 8–24 hours—overnight delivers maximum flavor.
Prep for Cooking
Remove steak from marinade 30 minutes before cooking to reach room temperature. Pat dry with paper towels to ensure proper searing.
Sear
Preheat grill or cast-iron skillet to screaming hot (450–500°F). Sear steak 4–5 minutes per side for medium-rare. Pull from heat when internal temperature reaches 125–130°F.
Rest and Serve
Rest steak 10 minutes loosely covered. Slice thinly against the grain for maximum tenderness.
Tips
Flip the bag a couple times while marinating so every inch gets love. Leftover slices are incredible in fried rice the next day.
2. Flank Steak with Garlic Butter Sauce
20 minutes from pan to plate. This is my “I forgot I invited people over” emergency recipe.
Ingredients
- 1½–2 lb flank steak
- Kosher salt & black pepper
- 1 Tbsp neutral oil
- 4 Tbsp butter
- 5 garlic cloves, thinly sliced
- 1 tsp fresh thyme or rosemary
- Fresh parsley for garnish
Instructions
Prep the Steak
Bring steak to room temperature (30–45 minutes). Pat bone-dry with paper towels. Season generously with salt and pepper on all sides.
Sear
Heat cast iron skillet until smoking hot (3–5 minutes). Add 1 tablespoon high smoke-point oil. Sear steak undisturbed: 4 minutes first side, 3–4 minutes second side.
Butter Baste
Final minute: reduce heat to medium, add 2–3 tablespoons butter, smashed garlic cloves, and fresh herbs. Tilt pan and repeatedly spoon foaming butter over steak for 30–60 seconds.
Rest and Serve
Rest steak 8–10 minutes loosely covered. Slice against the grain. Pour all pan butter over sliced steak.
Tips
Use the thinnest garlic slices you can manage. They turn into crispy little chips of heaven. My daughter steals them straight from the pan.
3.Tender Grilled Flank Steak
The secret? A little fresh orange. It tenderizes and caramelizes like a dream.
Ingredients
- 1½–2 lb flank steak
- ⅓ cup fresh orange juice
- ¼ cup soy sauce
- ¼ cup olive oil
- 3 Tbsp honey
- 4 garlic cloves, smashed
- 1 Tbsp grated fresh ginger
- Zest of 1 orange
- 1 tsp toasted sesame oil
Instructions
Marinate
Combine all ingredients in a zip-top bag. Add steak, seal, and refrigerate 4–12 hours.
Grill
Remove steak from marinade and bring to room temperature. Preheat grill to high heat. Grill 4–5 minutes per side, watching the honey and orange juice caramelize into a glossy, sticky glaze.
Rest and Serve
Rest steak 10 minutes loosely covered. Slice thinly against the grain.
Tips
Save a spoonful of marinade (before adding raw meat) to drizzle over rice or veggies. Chef’s kiss.
4.Chili Lime Flank Steak
Proof that 15 minutes of marinating is sometimes all you need. Perfect Taco Tuesday material.
Ingredients
- 1½–2 lb flank steak
- Juice + zest of 2 limes
- 3 Tbsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp cayenne (optional)
Instructions
Season
Mix all spice rub ingredients into a paste. Rub generously all over steak. Let sit 15–30 minutes while grill preheats.
Cook
Grill or pan-sear over high heat 4 minutes per side for medium-rare.
Rest and Serve
Rest steak briefly (5 minutes). Slice against the grain and squeeze fresh lime over the top. Serve in warm tortillas or over salad. Ready in 20 minutes.
Tips
Double the rub and keep it in a jar. It’s also amazing on chicken or shrimp when you’re really in a rush.
5. Balsamic Flank Steak with Creamy Whipped Feta
Fancy enough for date night, easy enough for Tuesday. The tangy whipped feta is borderline addictive.
Ingredients (Steak)
- 1½–2 lb flank steak
- ⅓ cup balsamic vinegar
- ¼ cup olive oil
- 3 Tbsp honey
- 3 garlic cloves, minced
- 1 Tbsp Dijon mustard
- 1 tsp dried oregano
- Salt & pepper
Ingredients (Whipped Feta)
- 8 oz feta, crumbled
- 3 oz cream cheese or Greek yogurt
- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- Fresh herbs (oregano, dill, or basil)
Instructions
Marinate
Combine balsamic marinade ingredients in a zip-top bag. Add steak and refrigerate 2–24 hours.
Cook
Remove steak from marinade and bring to room temperature. Grill or sear over high heat 4–5 minutes per side. Rest 10 minutes loosely covered.
Prepare Whipped Feta
While steak rests, blend or whip feta ingredients until fluffy and smooth.
Serve
Spread whipped feta on a platter. Slice steak thinly against the grain and arrange over feta. Drizzle with reduced balsamic from the pan.
Tips
If you reduce the leftover marinade in the pan for 2 minutes after cooking, it turns into the most gorgeous glossy sauce.
Conclusion
These five recipes have carried me through birthday parties, lazy Sundays, and those “what’s for dinner?” panic moments we all know too well.
They’re proof that one inexpensive cut of meat can taste completely different and completely amazing five nights in a row.
Pick one, any one, and I promise your family will crown you the grill master (or cast-iron wizard) of the house.
